I have an HP DesignJet T520. How can I disengage the cutter so I can manually cut? I called HP and the tech said it is not possible, but that seems hard to imagine... Also, does anyone know where I can purchase 24" printable canvas rolls that are not more than 11.8 mil?

I think the poster above thinks you can not cut which is actually what you want to do. See below:
Turn the automatic cutter on and off
To turn the printer's paper cutter on or off, go to the front panel and press the wrench , then Printer
preferences > Print retrieval > Enable cutter and change the cutter option.
The default setting is On.
NOTE: If the cutter is turned off, it will not cut the paper between jobs, but it will continue to cut the
paper on loading and unloading rolls.
TIP: To cut roll paper while the automatic cutter is disabled, just use form feed and cut.
