Hi Everyone! I'm desperate for help as NY business solely is dependent on this machine.

I have a Designjet 800 and an Epson that I turned into a sublimation printer. The Designjet was not reading the ink right and would say it was out when it was 100% full. I purchased a modification chip that I simply clipped on and it worked a handful of times. Then the images started coming out red. But when I shut it down for a couple of days and plugged it back in the first image it printed came out normal and then it was back to the same issue. Now my Epson is also printing red and all the troubleshooting has come back as normal but it's still printing red. Do you think this was just a coincidence they both went out at the same time? How do I fix?

If both printers show the same issue, have you considered that you might have a software issue of some sort?  If you run the print tests from the control panel of the printer do those come out correct? If they do then you are likely dealing with a driver or software issue.
