HP DesignJet Z9

we have Z9 printer on a network with a print server. If I click the Forms tab in Print Server Properties from Control Panel, it displays a list of forms of various sizes, none of which can be deleted (I've deleted all those I was able to). From an application (Photoshop as an example), if I open Properties>Paper Options>Document Size (dropdown) and choose "More...", I get a much longer list of what look to be standard sizes (ANSI, American, Architectural, etc.) and Custom sizes. I am trying to control and standardize the Custom sizes as they are currently unorganized, unstructured, duplicates, etc. Question is how are these definitions managed, as they do not appear in Forms area of the Print Server Properties?
