Ok, have spent WAAAAAY too much time figuring this out (since it doesn't look like HP is going to be coming through with actual MIBs).  Thought I'd share and hopefully spare some other poor soul the toil and Scotch consumption.

OIDs for Ink Level (as a percentage) are:

.1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.5.4.2.1.0 (Magenta)

.1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.5.4.4.1.0 (Matte Black)
.1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.5.4.5.1.0 (Photo Black)
.1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.5.4.6.1.0 (Chromatic Red)

Well, they are for the Z9+ Pros I hang out with..

Now I'm off to find the ones for Roll Length.

Roll 1:  1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.3.3.1.11.0
Roll 2:  1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.3.3.2.11.0

Note:  I'm using Feet / Inches, and the unit these OIDs return on mine is 1/720 inch.  So, multiply by 0.00011574074074074 to get Feet.  If you're using Metric..  ??

Now off to see about a brute force SNMPWALK alternative..  Maybe that will find the &%^%^ OID for Maintenance Cart %.

Still digging around for that maintenance cart info, but..

As a mental break I decided to take a swing at the Z6 and PageWide XL 4700 plotters I keep tabs on..

They're using same OIDs.  Here's how it breaks down:

Paper length:   1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.3.3.x.11.0  Where x is the roll number.  Same unit of 1/720 inch.

Ink:  1.3.6.1.4.1.11.2.3.9.4.2.1.4.1.5.4.x.1.0 Where x is the ink cartridge number.  Won't be the same colors between models, but should be able to figure it out from ink levels, etc.  Reports percentage.
