Just pre-question FYI .. This PC came with Win 7 pro and has been upgraded to Win 10 Pro via the ISO (I believe) process. I have no other issues at this time.
I have an internal HD in a (powered) case outside the PC connected via USB. any time I reboot due to updates or whatever, it looks for an OS on that drive and won't boot. I am told I can change the boot sequence but, have no idea how to do so.

See the service manual at the link below, chapter 2, page 5 for how to get into and use the F10 setup utility.
Page 9 provides the instructions for how to change the boot order.
Select the primary hard drive to boot first.
