What is the biggest and most outrageous graphics card options that will fit in the stock case and attach to the stock motherboard, assuming I am willing to upgrade the PSU as needed and have already upgraded the processor to i7-7700 3.6gb

Your OMEN by HP Desktop PC - 870-224 (Z5M58AA) is fitted with the Odense2-K motherboard (SSID: 82F1), which is 24-pin ATX-power enabled, meaning, you can swap your current power supply (probably a 500-watt unit -please verify) with any industry standard ATX power supply, as long as you watch its dimensions (LxWxH) for fit inside you case.
With your 500-watt power supply, you can power graphics cards up to an RTX 3060, GTX 1080, or an RTX 2070, to name some of the most common GPUs.
However, if you are willing to upgrade your power supply*, you can consider anything you want, but watch the GPU's dimensions for fit inside your desktop and what PCIe power cable(s) it needs. If you go this route, you probably want to add an additional chassis cooling fan to improve airflow through your PC.
* For example, an RTX 3070 or an RTX 3070 Ti requires a 600-watt power supply.
Speaking of a processor upgrade, you could consider an i7-7700K which is also compatible with your rig.
