I like to increase the RAM capacity of my PC, but not sure if possible or part number I need
please help

Welcome to our HP Community Forum!
Your HP All-in-One 24-f0047c (3LA31AA) is fitted with a Rhone motherboard (SSID: 8430) -see: https://support.hp.com/gb-en/document/c05929092 and can be upgraded up to 2 x 8GB of DDR4 PC4-17000, 2133 MHz, Unbuffered, Non-ECC, SODIMM, 260-pin RAM sticks. You can use DDR4 PC4-19200 (2400 MHz) or PC4-25600 (3200 MHz), but these RAM will be down throttled to 2133 MHz.
Let's find out what RAM you got installed now: type cmd in your Windows search bar, right-click on the Command Prompt App, and left-click on "Run as administrator", then "Yes" to provide permission, and copy/paste/enter the following command:
wmic memorychip get devicelocator, manufacturer, partnumber, capacity, speed, memorytype, formfactor
Please share what you got.

What is the better setup to choose for this upgrade? two 1rx8 sticks of two 2rx8?
I read that it's dependant on the motherboard and the spec page says "single channel memory architecture" So I'm lost on how to proceed.

In general, the difference between dual rank (2Rx8) RAM -btw, not be confused with dual channel RAM-mode, compared with single rank (1Rx8) RAM, is quite subtle. Meaning, in a nutshell, I have seen better RAM performance with dual rank RAM in some of my rigs, but not all. Just buy identical quality RAM (Samsung, Crucial, PNY, Silicon Power, etc.) and you should be good.
