Can I replace hard drive of HP Elite Desk 800 G4 35W desktop mini to a solid state hard drive with a lot of storage - needed to run Adobe suite of graphics programs?  If so, please provide recommendations.

Your machine has MANY options for storage from 2.5"SATA HDD/SSD or M.2 SATA or NVMe SSD.

Which ever option you have now you can upgrade to 2TB.

But you are saying you wish to run Adobe graphics suite. More storage does not help much, you need faster CPU and good GPU. CPU wise is okay but machine only has  Intel HD Graphics (integrated) which may not run Adobe suite smoothly. You can add option AMD Radeon RX560 4 GB GDDR5 to your machine.
