I recently purchased a used ProDesk 600 G4 with a i7-8700T CPU. The unit came with an aluminum heatsink but I heard that the Elitedesk 800 G4 comes with a copper heatsink. I'm wondering if the heatsinks are interchangeable? I'm also wondering if anyone has done any thermal testing to compare the two? I suspect the copper heatsink would allow for lower temps and less fan noise with my current CPU.

The two heatsinks appear to be interchangeable:
And you are correct: the all-copper heatsink version to the right definitely cools better.
I would recommend purchasing an HP EliteDesk 800 G4 Mini heatsink from an eBay Seller who allows for returns if for whatever reason the three heatsink mounting holes are offset compared with the HP EliteDesk 600 G4 Mini.
An HP EliteDesk 800 65W G4 Desktop Mini (DM) was one of my HP legacy desktop upgrade projects, where I took a different heatsink improvement approach: Solved: Upgrading an HP EliteDesk 800 65W G4 Desktop Mini (DM) - HP Support Community - 8708671.
