I need help knowing if this motherboard supports the latest GPU's

You did not offer an exact model number, but the Odense2-K can be found in the HP 870-224.

This model has a GTX1060 (120W) on a 500W PSU.

Based on that example, the RTX2060  (160W) or the RTX2080Ti  (250W) would require a new PSU.  The card length also is an issue. The RTX2080Ti is 10.5", and the Odense board is 9.4".  Would that extra length fit?

Length of the PSU into the cabinet becomes an issue.  The  Corsair CX650 is .75 inches longer than a standard PSU.  It might be too long to fit against the DVD drive cabling.

I actually currently have the RTX 2070 in my HP Omen 870-244, it was originally the GTX 1070. And thus far have experienced absolutely no issues in terms of power delivery to components. The motherboard has no issues with the RTX lineup the only roadblock you may experience is with the psu. My pc has a 500 watt PSU without issues, your mileage may vary though.
