It seems quite straightforward to add just one HDD or SSD, but I have an old pair of 500 GB HDDs that are just gathering dust, Will the Stark 8860 motherboard support these (in addition to the 1T SSD shipped)?

Welcome to the HP Forum.
Your PC has one M.2 PCIe, NVME (operating system) SSD. The installed MB should also support two SATA data connections. HP usually provides two SATA power connections for two additional SATA drives.
You may have to provide SATA data cables.
The specs for your PC at this Site indicate two 3.5 inch SATA HDDs can be installed in the drive cage. I would verify this by examining the drive cage mounting points and the surrounding space.
I had thought the drive cage in your PC would be limited to one 3.5 inch SATA HDD and, possibly, one 2.5 inch SATA SSD.
