I have read that the GT1030 Low Profile is the GPU that I should use. Does that mean any GT1030 will work?

Yes, any low-profile GT 1030 will work in your HP EliteDesk 800 G3 SFF. And your stock 180-watt power supply should be able to handle the wattage needed. Btw, you could upgrade the power supply if you are so inclined with a 250-wattt power supply, with HP p/n: 901760-004, in case you want to install a (much) higher performing graphics card, such as the (low profile) RTX A2000 6GB. You can purchase a 250-watt PSU for $40 or less via eBay: HP 901760-004 for sale | eBay.
