I'm getting a hp 6200 pro mt with a i5 2400 and 16gb ram and Wondering if you can upgrade it with a full size gpu like rx 580 8gb and if not , what GPUs can I put in it?

You need a 450 watt power supply for the 580 board

The gt 1030 is also good.  Use tech power up to compare graphic boards and to see the recommended power supply

I want to be able to play some pretty gpu demanding games so what would be the best gpu you could upgrade it with

Adding to @BeemerBiker: I would suggest upgrading your processor to either an i7-2600K or an i7-2700K, which both have a 95-watt TDP, the same as your i5-2400 -but perhaps I digress.

 

I would also recommend using an HP to ATX power adapter cable, such as shown here: Amazon.com: COMeap 24 Pin to 6 Pin ATX Power Adapter Cable for HP Z220 Z230 SFF MT TWR Series 4000 6.... You can purchase these adapters anywhere, including AliExpress.  With this power cable adapter, you can remove your HP power supply and replace it with an industry standard (500-watt or more) power supply, which can power an RX 580 -or whatever else your budget allows. Watch the PSUs dimensions (LxWxH) for fit inside your case.
