hi,
I've gone through the forum and understood that I can upgrade my current i3 elitedesk to an i5 or i7. Taking into account I wish to do light gaming on it which option would be best? an i5 or an i7?
I'm also going to upgrade the ram memory, looking to have dual channel 2x4GB (there already) and adding 2x16GB 2400mhz. Is this advisble or should I just keep the new 16gb and remove the other 8gb?
for last, I'm thinking of adding a GTX 1650 to it. From my research is the most I would be able to get without having to change anything else. Does this make sense?

Which version do your have?
I suspect you meant to type ProDesk instead of EliteDesk

Welcome to our peer-to-peer HP Community Forum!
I would go with an i7-7700. Assuming you got an HP ProDesk 600 G3 Small Form Factor (if not, let me know), its stock 180-watt power supply is insufficient to power a GTX 1650. You'll have to upgrade to a 250-watt power supply with p/n: 901761-002. With regards to RAM, please remember that for best RAM performance, it is best to 'stick' with identical RAM: same brand, model, and capacity.

Noted on the i7-7700 option.
Is it worth buying the GTX 1650 + the power supply? Or should I just reduce my expectations and get a RTX 550 instead?
For the RAM yes, I was thinking of buying a couple of 8GB sticks (instead of 16GB which is double the price) and adding to the double 4GB there. This I imagine isn't advisable then?

"Is it worth buying the GTX 1650 + the power supply?" Well, that depends on what it is you want to do, and also if you can affordably purchase a Low Profile GTX 1650 and the upgraded power supply -in other words, what you are willing to spend without breaking the bank.
As far as RAM is concerned, for your purposes it wouldn't matter so much to mix different capacity/model RAM -after all, 2 x 4GB + 2 x 8GB is still tripling your RAM which is good. I would install the RAM as follows: 8 + 4 + 8 + 4GB*.
* Consensus is that you want to install matching RAM pairs in 1+3 and/or 2+4 (and/or: 0+2, 1+3) OR in the same color RAM slots.

as for the graphics card, what option then would still grant me some interesting graphics without haven't to invest on the PSU? Do you have any suggestion?
From what I've gathered I would have to get the i7 (roughly 50€ used), the PSU (roughly 160€) and the GTX 1650 (roughly 150€). Alternatively just getting the i7 + a lower end GC.

The GT 1030 2GB (low profile) would be my best pick for a 180-watt power supply. The RX 550 you mentioned earlier only provides marginally better graphics performance than a GT 1030 (see: UserBenchmark: AMD RX 550 vs Nvidia GT 1030), and it is not clear to me if your power supply can even handle it: AMD recommends a 400-watt power supply (see: Radeon™ RX 550 Drivers & Support | AMD), which in my opinion is wattage inflated: TechPowerUp, for example, recommends a 250-watt power supply (see: MSI RX 550 Low Profile OC Specs | TechPowerUp GPU Database), but regardless, you can see what I mean.

I have a couple of updates a bad one as well 😕
I was able to upgrade my RAM, this was easy enough. 2 sticks of 8gb plus de 2 sticks of 4 gb that came with the pc. In total 24gb of ram isn't that bad! Computer posting it fine.
I've purchased an i7 7700 which should be in arriving soon as well as 250w power supply 2nd hand.
Now for the bad news, bought a brand new pretty GTX 1650 LP but it doesn't fit 😞 the pcie lane it connects is too close to the PSU and it doesn't fit the cooler in between the PSU and the fitting. So now I'm sort of stuck:
A) either I return the card and some other less powerfull one
B) try to find another case that I could potentially fit all of the internals (and lose the SSF?)
C) maybe try getting some sort of graphics card raiser to see if I could make it fit?
D) is there another MOBO I could fit in the case that could potentially give me clearance I need and still fit in the elitedesk sff?
It's a bit of a bummer as I was sure I saw people many examples of people fitting the card in the case. I can't figure out why it's different though...
Even the picture I posted above is of a youtube video (where the mobo and case are exactly like mine) but in this video: https://www.youtube.com/watch?v=3HDpR7FZgAw&t=345s it's possible to see that in the same case, the mobo is very different and allows enough space for an A2000.
