I was wondering if I can switch the motherboard on my computer to one that will allow me to add a Thunderbolt 3 drive?

@r01111 -- well, almost anything is possible.

Is this your computer: HP Slim Desktop - S01-pF1048xt Product Specifications | HP® Customer Support

It lists one empty PCIe slot.

It might be easier to add-in a PCIe adapter-card that has a Thunderbolt socket, and connect your device to that socket.

How would I confirm what kind of PCIe adapter works for this computer?

it lists:  Expansion Slots:  2 M.2; 1 PCIe x16; 1 PCIe x1

One of the M.2 slots is occupied by your "C:" drive-letter.

The other M.2 slot might only accept a WiFi adapter stick.

The PCIe x16 slot is usually used by an add-in graphics adapter card.

So, that leaves the PCIe x1 slot for an add-in adapter, as per my suggestion.
