Hello, I'm looking in to upgrading my Slimline to an SSD. Could I use a SAMSUNG 860 EVO Series M.2 2280 500GB SATA III SSD in the machine, without getting rid of the main HDD?

Yes, there is One M.2 socket 3, key M for a M.2, SSD. The key M will allow you to install a NVMe or SATA, M.2. The NVMe would be faster than the SATA M.2 in your link.
