Welcome to our HP Community forum!
Yes, a Xeon E5-2687W v4 (12-Cores, 24-Threads, 3.00 GHz up to 3.50 GHz, 160-watt TDP) though seen few and far between, is compatible with your HP Z440 Workstation, as, for example, this User shows: https://www.userbenchmark.com/UserRun/65278601.
According to the specs, the "Central Processor Unit (CPU) cooler/heat sink assembly" (p/n: 782501-001) is graded for 140-watt processors (such as the Xeon E5-1680 v4), so it seems to me that it should also be sufficient for on balance a slightly higher TDP.
The processor I am using in my HP Z440 Workstation upgrade project: https://h30434.www3.hp.com/t5/Desktop-Hardware-and-Upgrade-Questions/Upgrading-an-HP-Z440-Workstatio..., is an Intel Core i7-6900K (140-watt TDP), but I worked it quite hard as a gaming processor, and never experienced any alarming CPU heat temps. This is just an anecdotal experience, of course, but the point I want to make is that you should try the Xeon E5-2687W v4, and if it is the case that you happen to be concerned about high temps using this processor, we can discuss later what steps to take to fix that.
Make sure you got all the cooling fans installed (Rear chassis fan, CPU heatsink/fan combo and Memory fans assembly), and use a quality thermal paste such as Arctic MX-4 or -if you are willing to spend a bit more: Thermal Grizzly Kryonaut.

Sorry, I wasn't clear: what I meant was to try the Xeon E5-2687W v4, not necessarily the i7-6900K!
I have edited my previous response accordingly.

I live in a hot region at Summer, so I have to choose between 2680 , 2667 or 2687w.
And sorry it is not an upgrade because I already don't have the workstation.
I shall order it, it is originally equipped with 2680 V4
And I may choose a better processor like 2687w or 2667.
