I have two HP ProOne computers that we would like to upgrade the RAM in. Where do I find RAM for these computers?
HP ProOne 600 G6 22 All-in-One PC (8WM72AV)
HP ProOne 440 23.8 inch G9 All-in-One Desktop PC (564F9AV)

Does the generation number matter when looking for RAM?
I was looking here but that was the only difference so was afraid to purchase something that might not be compatible,

I ask because where I was looking they were specific about it and where you sent me doesn't look to be so specific.

Does the generation number matter when looking for RAM?
Generation number is with SSD products, not memory.
Kingston memory is generally what HP uses in their motherboards.
What Kingston recommend is their guarantee that it will work.
It is best practice to not mix memory brands, only replace memory in pairs of guaranteed compatible modules.

Alright, one more quick question.
I am using the Maintenance and Service guide provided by HP and in it it says this,
Slots - 2
Maximum memory - 64 GB
Supported - 2 Gbit, 4 Gbit, 8 Gbit, and 16 Gbit non-ECC memory technologies single-sided and double-sided memory modules
Does that mean I can really only go up to 32GB because the largest supported is 16GB?

No.
That means that two 32GB modules of compatible memory are supported if you can find a source for them.
What you are seeing is a what HP recommends.
. If Kingston or Crucial guarantees that the max is 64 GB, that is their reputation on the line.
It means that they have tested and tortured the memory configuration and it works in their lab setup.
I do see some 32GB modules listed as compatible for the Pro One 600 G6 at the hyperlink that I provided.
I see compatible 32GB modules listed for the other PC as well.
You can shop for the modules with the part number and bet better prices for the very same modules online.
