According to http://h10032.www1.hp.com/ctg/Manual/c06409398.pdf, your HP EliteOne 800 G5 23.8-Inch All-In-One can take up to 2 x 16GB of DDR4 PC4-21300 2666 MHz Unbuffered non-ECC 260-pin RAM.
Interestingly, Crucial believes that this AIO can take up 2 x 32GB of RAM: Memory RAM & SSD Upgrades | hp - compaq | eliteone | HP EliteOne 800 G5 All-In-One | Crucial.com.
As per UserBenchmark: HP EliteOne 800 G5 23.8-in All-in-One Compatible Components, other 2666 MHz RAM (2 x 16GB) options that users have installed are: Samsung M471A2K43CB1-CTD 2x16GB, Samsung M471A2K43DB1-CTD 2x16GB, and Kingston 9905744-024.A00G 2x16GB.
