I just got this computer and want to keep the 1-year warranty in case something happens, but I'm wondering if I install a 2TB Hard drive (It has an m.2 SSD 256GB right now) and 16Gb ram upgrade will it void the warranty?

Save the original disk and put it back in before bringing in for warrantee.
Is there a seal on the cover? If so, try not to break it when opening the case. If a problem tell them it was opened for routine cleaning of dust.
Some manufacturers of NVidia cards require the after market liquid cooler to be removed and the original cooler put back on so there is some leeway with certain vendors. My area51 had no such seal but I kept the older graphics card around after I put in an RTX-2080.

hi
HP PCs - Damage Not Covered by the HP Standard Limited Warranty | HP® Customer Support
What matters is not to damage anything during or because of the replacement
Normally there is no or more label, but even if HP says that you have damaged the computer, because of the replacement, you can say what you want, on the reason for having removed it
just be very careful
