My question:
1) May I find a service manual for my motherboard?
2) With which processor may I upgrade my system?
3) Is it possible to upgrade memory from 8 Gigas to 16 Gigas?

Below is the link to the service manual for your notebook.
The processor and memory upgrade information can be found in chapter 1.
Your notebook can support 2 x 8 GB of memory and the best processor you can install is the i7-2640M.

If I change the processor, do I need to reinstall all programs and windows?

You're very welcome.
No Intel quad core processor works in the model series, but I did find the HP Quickspecs for the 6560b model series which shows that the Intel Core i7-2640M Processor is supported which seems to be updated info than what the service manual indicates.
I've attached that document below.
