I would like to ask if there are any limitations in terms of gigabytes or terabytes of an SSD in an HP ProDesk 400 G2 SFF PC?

Your HP ProDesk 400 G2 SFF will support at least up to a 4TB SSD (assuming you run 64-bit Windows 10).
(Reference: Crucial under "Storage" -> "Internal SSD": https://www.crucial.com/compatible-upgrade-for/hp---compaq/hp-prodesk-400-g2-sff.)
Given that this SFF has three available SATA ports, you should be able to add/fit a secondary SSD as well. Unfortunately, a PCIe to NVMe SSD adapter wouldn't work, if only because of a lack of a PCIe X4 slot. I imagine you're using the PCIe X16 slot for a GPU.
