My friend, you have come to the right place.
An HP ProDesk 600 G4 MT was one of my legacy HP desktop upgrade projects, and you can indeed transform this sleepy office desktop into a lean-mean gaming machine: Solved: Upgrading to an HP ProDesk 600 G4 MT - HP Support Community - 8610054.
Long story short: the 400-watt power supply you want has p/n: 942332-001 which has one 6+2-PCIe power cable. You can comfortably power up to an HP (or Dell-) branded RTX 3060 12GB graphics card with it -these are the 3060 cards which only need one 6+2-pin PCIe power cable.
