I bought an HP monitor27es in Spain and am moving back to the States. Can I just simply buy a new US power cord for the monitor and it will work just fine?

All you need is a new power cord that would plug into the power supply. Those units use a universal 120/230V 50/60Hz power supply that utlilizes different power cords for the various wall plugs found in other countries.
A type "C" wall plug is usually Spain, Denmark and Switzerland.
