I have an HP All in One with Windows 10 Home. After it did its updates this morning, my photo and document folders are empty, and when I clicked on the icons for email, weather, and the Microsoft Store they instantly disappeared. The settings window is not even allowing me to add an email account.

There are two possible update sources: HP or Microsoft.
HP updates are optional. Microsoft updates can be delayed to a certain extent depending on the operating system.
Roll back your PC as follows:
Open Control Panel, Recovery, open System Restore.
Select Recommended Restore or select an older restore point if applicable.
Follow prompts to restore the PC to a point prior to the problematic update (HP or Microsoft).
Don't do the HP update again. The Microsoft update can only be deferred.
