When trying to boot the drivers & OS are not found; the SSD seems to be damaged. I am attempting to replace the SSD, but cannot access BIOS

Welcome to the HP Forum.
Check your PC's hardware using HP Diagnostics as follows:
Start the PC. Repeatedly tap the "ESC" key.
Select "F2". Run extensive system and component tests to confirm: a drive problem, a memory problem, or other component problem. Selecting "F10" instead of "F2" at the above HP Startup Menu should also provide access to the BIOS.
It looks like your PC shipped with a PCIe NVME M.2 SSD.
You can replace this device if HP Hardware Diagnostics confirms: the system drive has failed or is not detected when running the above test.
You might be able to recover data from the possibly failing NVME drive if you don't do data backups.
You can use the HP Cloud Recovery option available Here. HP Cloud Recovery instructions can be reviewed at this HP Site.
You will have to create the Cloud Recovery media on a different PC.

Sorry to see this happen.
I don't know what to tell you.
I see no reason why a new, compatible, NVME SSD, correctly installed in the MB, is not recognized in the BIOS.
What SSD brands did you try? Some HP PC's have problems with Samsung NVME SSDs.

Thanks for the info.
The Samsung and WD SSDs will not work if your PC's BIOS cannot see either drive.
I know this can be very frustrating. And, any capacity PCIe NVME replacement drive should work.
I can only suggest, which is going to be a PITA with no guarantee of success, is to try a Crucial Memory.
HP Pavilion 27-ca1000i AIO M.2 NVME SSD upgrade options can be reviewed at this Crucial Link. Crucial lists many internal SSD purchase options.
Or I would think a HP NVME drive should work. Check Amazon for some HP NVME drive options. Amazon shows a few HP NVME drives on the main NVME drive list in the Amazon link.

Please confirm both SSDs are not detected by the BIOS. This is a critical point.
A new data SSD will only be detected by the operating system after using Disk Management to setup this drive. You can install Windows on a new SSD only if: both the BIOS and Windows Setup detect the drive.
Some Intel PCs require an IRST driver injection to install Windows even if the BIOS detects the drive.
Your issue is confusing. HP seems to be modifying your PC's MB firmware to flag certain SSDs. I don't know why, but it is what it is.
I build PCs using retail MBs and different SSDs from many SSD manufacturers. Never had an installation problem where the BIOS does not see the new storage device.
I did previously indicate there was no guarantee of success using Crucial.
Crucial normally states their: memory and SSDs will work on HP MBs if you purchase compatible Crucial components listed for the specific HP PC.
Nothing is certain in life. But Crucial should do a full refund if the SSD does not work.
