Can I simply remove my SSD that has my operating system on it, take it in and have everything transferred over to a new and larger SSD and install it in my computer and expect it to function properly?

No.  

That ship sailed many years ago. 

 

There is a specific process called cloning that you will need to perform. Windows does not have a cloning utility that is built into the OS.

You can use third-party cloning software, either free and paid, to accomplish successful cloning to your new SSD.
