I own an HP Desktop-M01-F0014 Product 6YQ58AA and it currently has a 256GB SSD drive, a SK Hynix Bc511 hfm256gdjtni-82a0a. I was wondering what kind of drive I need to get to upgrade it to a 1TB SSD.

I recommend this drive to replace the 256 GB SSD your PC currently has:

I was searching Amazon and before I purchased the SSD Drive, I wanted to know what kind would work, I found SAMSUNG 990 EVO SSD 1TB, PCIe Gen 4x4, Gen 5x2 M.2 2280 NVMe Internal Solid-State Drive, Speeds Up to 5,000MB/s. would this work? the speeds are up to 5,000MB/s instead of 3,500MB/s.

It was ranked no. 2 in the Buyers Guide.org under the best M2 1TB SSD. The SAMSUNG 990 EVO SSD 1TB, PCIe Gen 4x4, Gen 5x2 M.2 2280 NVMe Internal SS Drive, Speeds Up to 5,000MB/s Upgrade Storage for PC Computer, Laptop, MZ-V9E1T0B/AM, black, came with a 9.8 rating and 5 stars rating. The Crucial P3 Plus 1TB PCIe Gen4 3D NAND NVMe M.2 SSD, up to 5000MB/s - CT1000P3PSSD8 ranked no.1 with a 10-rating rating and 5 stars rating too.
There is another Crucial P3 Plus 1TB M.2 PCIe Gen4 NVMe Internal SSD - Fino a 5000MB/s - CT1000P3PSSD801. Difference in listing is the model number having a 01 at the end and not being a NAND. and it was first made available May 24,2023 where the crucial NAND was first made available June 30,2022.
I think I want to buy the Crucial its rating is no.1 or the Crucial-Fino and they both have the same speed but is $15 less than the Samsung 990... The SAMSUNG 980 SSD 1TB PCle 3.0x4, NVMe M.2 2280, Internal Solid-State Drive, Storage for PC, Laptops, Gaming and More, HMB Technology, Intelligent Turbo-write, Speeds of up-to 3,500MB/s, MZ-V8V1T0B/AM came in ranking no. 8 with a4.5 stars rating and is $15 more than the Crucial and is only 3500MB/s compared to 5000MB/s with the others.
Will the Crucial SSD work?

Yes, any of those drives would work fine but they will not run at their maximum advertised read/write speeds from your PCs Gen 3.0 SSD slot, which I'm pretty sure it is.
This table shows the maximum transfer speeds each PCIe slot generation can support:
