Can I replace the hard drive in my HP Pavilion 570 with

HP S750 512GB SATA III 2.5 Inch PC SSD, 6 Gb/s, 3D NAND Internal Solid State Hard Drive Up to 560 MB... ?

Yes, you can do that.

For the 2.5" HP SSD you will need a 3.5" to 2.5" hard drive caddy so you can mount the 2.5" SSD where the 3.5" drive is currently installed.

As an alternative, could I replace the 128 gig c: drive with an HPFX900 512 gig NVME 2280?

Yes, you can do that as well, but since your PC's M.2 slot is only PCIe Gen3, you will not achieve the maximum read/write speeds advertised.

I recommend either the Samsung 980 (not 980 Pro) 500 GB, or the Western Digital Blue SN570 500 GB.

Those are both PCIe Gen 3.
