I am curious if I can update my memory from x2 8GB sticks to 2 x16 GB sticks. Both are DDR4 so I think it should be compatible but I don't know if there's something I'm missing. I have a Ryzen 7 1700 CPU and an RX 550 GPU. The current sticks of ram I have say 2666MHz, so I'm curious if that means I can't do 3200MHz ram. I have a sunflower motherboard, the green varient.

Yes.
It is upgradeable to 32GB.
Here is a source for guaranteed compatible memory for your specific model series motherboard.
