I would like to know if I can swap out a Core i5 - 8500 CPU on the subject desktop for a Core i7 - 8700 CPU. Upon reading the documentation on this PC, I would like to know if the chipset would support a different CPU.

Yes, according to the HP specs the i8-8700 processor is supported in the model series:

An HP EliteDesk 800 G4 DM 65W was one of my legacy upgrade projects.  Perhaps you may find it useful -or at least entertaining.

I upgraded a few years ago to a better CPU on an HP 6000 Tower. It worked perfectly. I thank you for the confirmation that the Core i7 - 8700 will work on that desktop. I don't want to go as far as a Core i7 - 8700K. I'm not a gamer. That's beyond my budget also.
