I am looking for any information on the maximum RAM I can install on this desktop. Currently I am using 16GB of RAM but all info I can find is that this Desktop can support only up to 8GB of RAM which is weird. All the info I can find indicates the same thing (2 x 4 GB), except one source...

The H61 chipset only supports one double-sided DIMM Memory module (RAM module) per memory-channel and therefore is limited to 16 GB instead of the 32 GB like the others support. On H61-based motherboards with four DIMM slots, only four single-sided DIMMs can be installed.
If your are running 2 x 8 GB in there with no issues, then that is great news.
It's not going to hurt anything, if that is what you are concerned about.
I have a Dell Optiplex 7020 business desktop PC, and Dell's official specs state the max memory is 16 GB and the PC is happily running 32 GB of memory.
