The original storage configuration was a 1 TB Seagate HDD and a 16 GB Seagate mSATA SSD. The mSATA went bad (after five years—no complaints), so I removed it. Start-up is really slow now. So I'm interested in adding an SSD. I'm thinking that I should keep the 1 TB HDD as a back-up drive, and make the faster SSD my main drive.
I have about 500 GB of data on my HDD. So I'm thinking I should get a 1 TB SSD. What brand(s), features, and specs should I be looking for? Will I need any new cables for this installation?

I understand that you would like to upgrade the SSD.
(HP does not recommend upgrades as the device is equipped with parts that perform at its optimal performance and also, the upgradeable parts listed in HP articles are purely for your ease, though the decision to upgrade will be at your own discretion)
I would suggest you contact our phone support and check for the support option. They will help you.

2)Select the product type.
3)Enter the serial number of your device or select let HP detect your product option.
4)Select the country from the drop-down.
5)You should see the HP phone support number or Chat option listed.
