I would like to install a RX 6600 into my PC and would like to get a psu that's around 500w but I'm unsure about what PSU I can upgrade with. Would any ATX PSU work or is there a specific PSU I need to buy from the HP Website? Would any PSU that have enough pins for the GPU and mobo work?

And you have come to the right place.
To cut to the chase, your HP ENVY Desktop - TE01-0049 (6YR00AA) is fitted with a Rother motherboard (SSID: 8653), and you can upgrade your power supply with a 500-watt PSU with p/n: L05757-800.
You can buy one of these power supply units online, such as via eBay-Canada: HP L05757-800 for sale | eBay.

How do I know what power supplies I can and can't fit in the case? would any atx psu work as long as it has enough like pin connectors for the motherboard? I also can't seem to find out what type of connectors P1 and P2 are when I look at the motherboards photo from the hp website without actually opening up the PC.

We know this because HP motherboards wired/powered with proprietary power supplies are very difficult to replicate with industry standard ATX power supplies. Not worth it, in other words. Sure, many have tried, with at best mixed results.
Better to stick with compatible power supply analogs such as this source provides: Power Supply Cross Reference for specific models - HP Support Community - 7483923, where you can look up compatible power supplies for your Rother motherboard.
