For the past couple of days I have tried to find information relating to the max size graphics card I can install in this Slimline, but to no avail. The only partially helpful piece of info I could find is confirmation that it does have one One PCI-E x16 socket: https://support.hp.com/us-en/product/hp-slimline-270-p000-desktop-pc-series/13823526/model/17961732/.... I'm currently looking to upgrade to a GTX 1050, nothing too big. Can you help me out?

I see from your post that you need information and assistance related to upgrading of graphics card on your HP Desktop PC. No worries, I'll be glad to assist you.
As you have mentioned in your post that your PC has One PCI Express x16 slot available for the graphics card.
Please note while upgrading the graphics card, please ensure you check the form factor and then next thing, is to check for the recommended power supply.
On your PC you have an Internal 180 W PSU- Note: remember to check the form factor as well for the power supply (180 W SFF Bronze)

Regarding the GTX 1050, you can try to install but we cannot guarantee if it's going to work or not, as it's not been tested on your PC. Here's the specifications of the graphics card.
