i need a power suply with 320 waths or more ti my elitedesk g1 intel core i3 (4ªger) it's that possible and were can i buy it

According to http://h10032.www1.hp.com/ctg/Manual/c04331008.pdf, only the HP EliteDesk G1 800 Tower version has a 320-watt power supply:
You can purchase this 320-watt power supply via eBay: hp 702452-001 | eBay
Whereas the HP EliteDesk G1 800 SFF only comes with a 240-watt power supply.

Yes, there are alternative solutions to allow higher-wattage (ATX) power supplies to power your desktop & graphics card.
The easiest alternative for your HP EliteDesk G1 800 is to use an ATX 24-pin power converter adapter, such as this one: Amazon.com: COMeap 24 Pin to 6 Pin ATX Power Adapter Cable for HP Z220 Z230 SFF MT TWR Series 4000 6....
I applied this power adapter very successfully on two of my upgraded legacy HP desktops, such as an HP Pro 6300 SFF: Solved: Upgrading HP Compaq Pro 6300 SFF - Page 5 - HP Support Community - 8184303.
Because an SFF (small form factor) desktop has limited space, I had to park the ATX PSU outside the case, same for the outsized graphics card. However, if your HP EliteDesk G1 800 happens to be the Tower edition, you should have sufficient space available to house both a replacement ATX power supply and a high(er) end graphics card.
As you may have guessed, implementing these modifications require some level of mechanical/DIY skills.
But if you are comfortable taking this on and/or have someone to assist you with this project, the end results are very rewarding and -at least in my opinion, a lot of fun!

I have an SFF and my question is: wouldn't it be more practical to change the case instead of putting the source out of the case? and choosing not to change the case, how would you do that? and with what source?

Sure, in that case (pun intended), you can buy a very affordable HP EliteDesk 800 G1 TWR for just $50: HP EliteDesk 800 G1 TWR w/ Intel Core i5-4590 @ 3.2GHz, 8GB RAM, No HDD or OS | eBay, and you don't even have to move your motherboard either.

Unfortunately, I can't see from which country you are posting from, hence my US eBay link.
An HP EliteDesk 800 G1 TWR does not have an M.2 NVMe SSD slot, but you could use an M.2 NVMe SSD by using an M.2 NVMe SSD to PCIe adapter, such as this one: Amazon.com: M.2 NVME SSD to PCIe 4.0/3.0 x4 Adapter, M.2 2280 2260 2242 2230 SSD to PCIe 4.0/3.0 x4 ...:
