Can I replace a power supply for my HP desktop pavilion 510-p109 with one with higher wattage? Mine is currently 180, and most I'm finding start at 400 to 500W

It doesn't matter at all: your system -including peripherals such as your graphics card, will use the power it needs and that is really all there is to it. It is nice to have excess PSU wattage for a number of reasons. Even if you were somehow able to fit, say a 850 watt PSU in your computer case, it would be the same story.
