Hello,
I am currently attempting to install Windows 7 on my EliteDesk 800 G2 mini. I have a 500gb sata ssd that I would like to install it on. I also have an ISO for SP1 x64 and can flash it onto a usb drive.
What would be the best way to do this? Will I need to change any bios settings?

Hi:
You will need to disable secure boot in the BIOS.
W7 does not support secure boot, and visa versa, and you will need to insert the USB 3 drivers into your W7 USB installation media, using the handy Gigabyte USB utility, because the PC has no PS/2 keyboard and mouse ports and W7 does not have the USB3 drivers to find the USB KB and mouse, so after W7 installs, you can't proceed any further.

See if using the Rufus utility to transfer the ISO file to a USB flash drive works and then use the gigabyte tool on it to install the USB3 drivers.
Rufus - Create bootable USB drives the easy way
Set up the Rufus utility as you see it in the illustration for Windows installations but change the partition scheme from GPT to MBR and boot the USB flash drive from the legacy USB boot source.

You're very welcome.
The problem is with your last screenshot setting.
You need to select Legacy Support Enabled, Secure Boot disabled.
If you want to install W7 in UEFI mode, then you need to set up the Rufus installer as the example shows in their website illustration and the Partition Scheme should be GPT.
Then the BIOS setting in your 3rd screen shot needs to be legacy support disabled, secure boot disabled.
If you only have two options in the 3rd screenshot drop down menu, then have it legacy support enabled, secure boot disabled and leave the Rufus-make W7 installation flash drive as you currently set it up.
