Hello -
I was looking for information on whether the RAM is expandable in this model. I could not confirm and found some varied opinions on whether it is expandable in this version. Some said no, others said up to 16GB. I mostly use it for searching online, zoom, and word processing applications. Zoom does run kind of inconsistently while other programs are running, so I would very much like to expand the RAM in attempt to help with that.
Other recommendations to make this computer work better on a budget are welcome too.

That document states:
Memory upgrade information
Dual channel memory architecture
Two DDR4 SODIMM (260-pin) sockets
Supports up to PC4-19200 (DDR4-2400)
Supports 2 GB, 4 GB, and 8 GB DDR4 SODIMMs
Supports up to 16 GB (unbuffered) with two 8 GB DIMMs

So, the short answer is "yes", either by
* removing two 4 GB sticks from the socket (a total of 8 GB) and adding two 8 GB sticks,
* adding a stick into an empty socket.
If you take your computer to a local "owner/operator" computer-store, they can open it up, and see what RAM you have, sell you some RAM (and maybe take the two 4 GB sticks as a "trade-in"), insert the RAM, and start-up your computer, to show you that it now has 16 GB of RAM. They might be so pleased to sell the RAM to you that they will do the "hardware" stuff at no additional charge.

The first web-page that I cited states:

So, you have the fastest-possible storage device.
Your processor has 2 cores -- it can simultaneously do 2 tasks.
The second web-page that I cited states:
Processor
- AMD Athlon Silver 3050U Dali (2.3 GHz base clock, up to 3.2 GHz max boost clock, 4 MB L3 cache, 2 cores)
- AMD Athlon Gold 3150U Dali (2.4 GHz base clock, up to 3.3 GHz max boost clock, 4 MB L3 cache, 2 cores)
- AMD Ryzen 3 3250U Dali (2.6 GHz base clock, up to 3.5 GHz max boost clock, 4 MB L3 cache cache, 2 cores)
So, at considerable expense, you can upgrade the processor, but only by a maximum of 13% -- definitely not worth your expense.
