Will a system refresh remove all of my programs i.e Office, Adobe suite etc? When it refers to 'files', is that only documents, photos, videos etc?

Refresh does remove your installed programs (Office, Adobe).
You will need to reinstall programs that you installed after the Refresh is completed.
This would be a good opportunity to visit your program websites and see if you can find the download and / or any updates for the program.
For programs requiring a license key, make sure you have these before you Refresh the system.
