i have a hp pavilion all in one 27-xa0009
can i upgrade my m.2 sata ssd 128gb with a m.2 nvme 500 ssd?

The product specs indicate that your PC comes with a 128 GB NVMe SSD.

But if the specs are not correct, and your PC has a SATA SSD, what you want to do should be fine because other HP AIO PC;s with the same motherboard came with NVMe drives such as this model:

Normally they do look different but there are some early NVMe SSD's that had two notches.
What I wrote is the HP specs for your PC indicate it came with a NVMe SSD and the parts list only shows a hard drive.
In any event, I have answered your question...you can install a 500 GB NVMe SSD in your PC.

i open my pc and the m.2 ssd has 2 notches and that what it says
