What seems like "a long time ago" there were two flavors of the HP Support Assistant.
The original was a full software version type.
The newer version(s) are all an application type.
The original "legacy" versions (at least 8.x and older) included a way to remove devices in HPSA Settings.
The application versions might lack this control.
Instead, sign into your HP Account Dashboard and remove an unwanted device.

Account Dashboard
Select Printers > In Section Printer Options > Click Invite Users / Print Anywhere / Remove Printer
