I have an HP Pavilion All-in-One and I need to hook up two additional monitors (for a total of three displays). I’ve hooked up one of the monitors using the HDMI port, and the other using the USB-C port (in fact, I am using an HDMI chord with a USB-C to HDMI adapter). No matter what I do, the system will only recognize the first external monitor (on the HDMI port). What do I need to do to incorporate the second external monitor?

I've found a solution! I had to order a different display adapter from amazon, a little on the expensive side but worth the money to get two additional monitors working with the HP AIO. Here is the link to the adapter: j5create USB Type A to Dual HDMI Adapter - Dual HDMI Multi Display Convertor | 4K Ultra HD + 1080p F... . You need to download the display adapter driver from their website, then plug the adapter into your USB a slot, restart your pc for the driver to be installed and then go to display settings and then the additional monitors will be detected.
