Simply ask: can I use the onboard HDMI and VGA port to drive two monitors on my desktop, a Pavilion 570-p026 (Intel 630 chipset)? I've tried but the second monitor isn't a VGA model by default and I also know the USB C port in the front of the desktop won't drive video (as it's non-Thunderbolt).

In theory, it should be able to drive two monitors using the HDMI and the VGA port. Depending on the second monitor's choices for input, possibly an adapter would work. The motherboard does have a One PCI-E x16 socket which could accommodate a graphics card that has the outputs needed, depending on the card you choose.
Or, if that does not give you joy, something along this line can do the trick, also.
That adapter has adapters for a multitude of possible monitor outputs.
