What dock, adapter or cable do i need to purchase to use 2 HDMI monitors for extended desktop use? I tried a USB-C to dual HDMI adapter and that didn't work. So, I suspect the USB-C port is for data transfer only, not video.

@R0bert_B -- is this your computer: HP Pavilion Laptop 15-eg1000TU Product Specifications | HP® Customer Support
I see: External ports
- 1 SuperSpeed USB Type-C® 10Gbps signaling rate (USB Power Delivery,
- DisplayPort™ 1.4,
- HP Sleep and Charge);
- 2 SuperSpeed USB Type-A 5Gbps signaling rate;
- 1 HDMI 2.0;
- 1 AC smart pin;
- 1 headphone/microphone combo
So, the question is whether the DisplayPort output and the HDMI output are "independent" -- whether they can be used at the same time, and whether they will only show identical content.
There do exist DisplayPort-to-HDMI video-cables, if both your external monitors have HDMI-input, but neither monitor has any DisplayPort input.
