Product: HP All-in-One

I was recently gifted an old All-in-One HP pc and I currently use a MacBook Pro for work, so I was wondering if there's anyway to extend my MacBook screen onto the pc, use it like a monitor. I believe the pc is from 2004.

Look at the back of the All-in-One.  If it has two HDMI slots, one will be Input, the other Output -- and you can connect to the Input slot. IF it has only one slot, it is Output.
