Can I put multiple internal hard drives into my HP EliteDesk 800 G1 Small Form Factor pc since there are two hard drive slots. Also, whether or not I can do that, what is the best internal SATA SSD's that I can put into this(storage size, type, etc.).

Yes, you can!
You got three SATA ports to hook up either HDD or SSD drives, and you can use both PCIe x16 slots (if you don't add a discrete graphics card) for PCIe to M.2 NVMe SSD adapters so that you can add one or two M.2 NVMe SSDs:
Please note that your desktop cannot utilize an M.2 NVMe SSD as its primary (boot) drive.
If you are short on SATA 15-pin power connectors, buy a SATA 15-pin splitter cable.

For all intents and purposes, there are no drive limits, but I would limit each individual drive (HDD, SSD, M.2 NVME SSD) to 4TB max.
