Overscan is when part of the image is not seen on the display.

Underscan is usually intentional. It is the black bar seen around a movie or TV show watched on a display.

Partially thanks to your suggestion to try a difference cable, I solved this myself! Solution: use an Apple Minidiplay --> DIVX adaptor and connect to the HP 27vc via DIVX.  The "scaled" resolution on the Display Preference show 1920 x 1080, and there is no overscan or underscan option to set:  because the image is scaled exactly to the screen and needs no adjustment. In short, the whole setup configures exactly the same as with my Pavilion 27xi. 

The improvement of the "scaled"  1920 x1080 image is very minor, but it's much better than the image I got from this monitor out of the box using an HDMI connection. 

I'm extremely puzzled as to why Mac OSX seems to read different information from the DIVX signal than it does from HDMI.
