I assume a M600 will also work?

Can you tell me if I can do the same with a M.2 do they have a kit for that format?

Update:  I booted into the setup utility, below, is what I found.

 

UEFI BOOT SOURCES:

-USB-FLOP/CD

USB/HARD DRIVE

 

LEGACY BOOT:

USB-FLOP/CD

HARDDRIVE

USB HARD DRIVE

 

NETWORK CONTROLLER AMT (IBAGE SLOT) 00C8 V1556

 

QUESTION, ( UFEI BOOT SOURCE), Doesn't that mean that I will likely be able to use a NVMe, with a Pcie adapter as a boot drive, and it will be reasonably simple to install win 7?

Well, after reading more on setting up NVMe, I have decided to pass for now, maybe sometime in the future. 

I'll just go with a M500 SATA sdd as was recommended by
