I have encountered some stability issues and self HP support accessibility with my PC.
I have a current BIOS of AMI F.28, 05/21/2024
In going to the HP support site I see an F.28 with a date of 05/29/2024 and one with a date of 10/04/2024 but not one with a 05/21/2024 date.
Question is I also see one with an F.29 with the similar dates as noted above.
Which one do I choose in an attempt to resolve these stability issues?

According to the parts list for your PC, it comes with a HP DoradoOC motherboard with a BIOS SSID of 8703.
HP Desktop PCs - DoradoOC-AMP motherboard specifications | HP® Support
You would install the latest BIOS update that HP has on the support page for the BIOS SSID of 8703, which would be F.29.
OMEN 30L Desktop - GT13-0380t CTO Software and Driver Details
The F.28 BIOS update with the same date is for a motherboard with a different SSID of 8704.
Verify that your PC's motherboard has the 8703 SSD before attempting to update the BIOS.
You should be able to confirm that by clicking on the search icon on the bottom left of the Windows taskbar.
Type System Information.
The system information app should show up.
Run the app and then look for the BIOS Version/Date line about 1/4 of the way down on the report.
